Christian Jose Morrison, Barnie's Coffee Head Roaster, has crafted another unique flavor for us in 2024 with the newest launch of Barnie's Limited Time Offering of our Single Origin Specialty Whole Bean Coffee of Quindio. This coffee profile has notes of sweet, cola, and a hint of cherry to really bring out its flavor.
The coffee has a roast level of two when produced, and comes to us from Ana Donneys, a 5th genertation Coffee Producer from Primitivo. She sold us the green beans from the coffee farm just outside of Colombia called Quindio, which is where we came up with our name for Barnie's Coffee product.
Ana Donneys is a 5th generation coffee producer. She has a passion for coffee and has provided Barnie's Coffee the best green beans from her small town.
The green beans from the farm in Quindio use a honey process method that Ana worked on together with Edwin Noreña, and thus it is one of the first differentiated process coffees produced at Primitivo. The varietal for this coffee is Catera.
This coffee is hand selected in the field, then it goes through flotation to separate by density, it is then taken to dry at African beds. Like the washed process, it is left for 12 hours in oxidation or fermentation in an open tank to homogenize the coffee mass in its maturation, and then placed in airtight containers for anaerobic fermentation for 72 hours. This drying took approximately 15 days.
Ana's passion for elevating Colombian coffee has led her to becoming the co-founder of the International Women Coffee Alliance where she creates opportunities for women to enter the coffee industry. We are pleased to partner with her on such a delicious brew for you to enjoy.
